Lotus Root Soup with Groundnut ~~~

I went to morning market. The lady pointed to the basket full of "carrots-like but in white color" and said how fresh the lotus root today. Oh... that is lotus root LOL
I decided to buy one n make soup today.
At first, I googled "how to clean lotus root".
Nothing much ppl mentioned,
just saying i can put the peeled lotus in water with a little bit of vinegar to prevent it turning into darker colour.So i guessed there is no an exact way to clean the lotus root.
After i rinsed it with water, wait... How to cut?
It looks like carrot, so i skinned and sliced like how i deal with the carrot.
Then i prepare the ingredients:
Groudnut, 3 handfuls
Red Dates, 8 pieces
3 Dry oysters, cut into small strip
3 Dry Octopus, cut into strip
1 Carrot, skinned and sliced
1 Lotus, skinned and sliced
Salt one pinch
(yes... u're right!! No meat!! I dunlike meat n dis is my recipe but it is stil very tasty, trust me, one time!!!)
Instruction:
1. Boil the groundnuts for 3-5mins then throw the water away.
2. Put fresh water to boil, then put in all the ingredients.
3. Bring it to boil and then simmer for 4hours.
4. Serve while it is hot.
It is very tasty even i boiled it without the meat.
N i hav the urge to boil the same soup tomorrow.
I googled again to learn how to choose a good lotus root:"A nice fresh one is a light orangey-brown. The older the root the browner and darker it is."The lady was right, the lotus root is fresh ;)

I miss your fruit puddings (果冻) so much... Those you made when we have BBQ sessions a couple of years back.
I wil cal u up for home made soup after my exam, isnt it when u wil finish chambering? Great timing! I dare NOT make the fruit pudding again. Im worried if it doesnt taste as good as b4, den u guys will stop missing my Fruit Pudding ;)
